RECIPE IDEA FOR YOU

ICE CREAM PUDDING

You will need:

1&3/4 Cups Mixed Dried Fruit
1/3 Cup Toasted Slivered Almonds
1/3 Cup Rum
1 Litre Vanilla Ice Cream
1 Litre Chocolate Ice Cream
1 tsp Mixed Spice
1/2 tsp Nutmeg1
tsp Cinnamon

Mix the dried fruit and almonds in a bowl. Pour Rum over the top and mix through. Cover bowl and leave overnight. Chill a 2 litre pudding basin in the freezer overnight.

Soften the vanilla ice cream slightly and working quickly press it around the inside of the pudding bowl, spreading it evenly to cover the base and sides. Return the basin to the freezer and leave to chill overnight.

The next day mix the spices with the slightly softened chocolate ice cream and the fruit mixture. Spoon it into the centre of the pudding bowl and smooth the top.

Freeze overnight or until firm. Turn the pudding out onto a chilled plate and decorate with chocolate flakes.
