After finding it difficult to encourage my little boy to try meat I found this Beef & Vegetable Bake to be the only way that he would indulge, so not only was it great for him we loved it too!
You will need:
750g Lean Mince Beef
1 tin of Tomato Soup
1 Red Capsicum
1/3 Cup Cream
2 Small Leeks
500g Potatoes
250g Sweet Potato
150g Pumpkin
Grated Cheddar Cheese
Heat some Olive Oil in a large pan and add leeks and capsicum. Cook for 3-5
minutes or until softened. Remove from pan.
Add Mince Beef to pan and cook over high heat for 5-10 minutes or until meat is well browned and liquid has evaporated. Add Leeks and Capsicum mix as well as Tomato Soup & Cream to pan. Stir until combined.
Whilst this is cooking, steam potatoes, sweet potato and pumpkin until tender. Mash together to be used as topping on the Bake.
Transfer mince to an ovenproof dish. Top with combined Potato, Sweet Potato and Pumpkin mixture. Sprinkle with grated cheddar cheese. Bake for approximately 30 minutes or until cheese is browning slightly.
